Let me start by saying that I am NOT a picky eater. I can eat about anything. But until a week or so ago, I would have had to add “except Brussels sprouts”. If mentionned, I would instantly remember their highly distinctive smell at my highschool cafeteria, and my growling stomach on such days. It certainly didn’t help that they were almost always served with rabbit heads (that’s french cafeteria my friends!).
But the Husband LOVES Brussels sprouts and has been begging me to cook some for years. I accepted was forced to buy some at the market recently and included them in one of our dinners (here). And I had a revelation: I do like Brussels sprouts! I couldn’t wait to have them again. So this weekend I got some at the organic food store and kept them on hand for a quick mid-week dinner. Last night was the perfect evening for them:
I started by oven roasting my sprouts with a little bit of olive oil, crushed red pepper and dried parsley.
On the side, we had a lean ground beef patty toped with sliced portobello mushrooms that I sautéed with some crushed garlic. Sprouts were toped with crumbled low fat feta cheese and Louisiana Hot Sauce. Easy and delicious!
My day is going to be packed with meetings and clinic and more meetings. I am planning to go to the gym around noon and train legs! Will tell you how that goes!
