So yesterday was the weirdest day for me. I wook up feeling great, despite the lack of sleep. Went through my morning pretty efficiently. Headed to the gym around noon but discovered it was closed 😦 so decided I would go in the evening after work.
BUT then in the middle of my 2pm meeting, I started feeling really bad. My nose was suddenly congested, my head pounding, and I felt kind of feverish! I struggled to finish my clinic afternoon, ran to the 5th floor unit to check on my patients with the residents. And then desperately headed home. Gosh, I hate being sick at work.
Since I was a little kid, being sick was an excuse for me to eat pasta! I’m a huge pasta lover! So tonight was homemade chicken nuggets with spelt spinach ricotta raviolis and light marinara sauce. For those of you living in France, I got the raviolis at the biocoop and they are delicious.
Homemade chicken nuggets (serves 2):
- 2/3 pound boneless skinless chicken breast
- 1/3 cup unsweetened cornflakes
- 1/3 cup whole wheat bread crumbs
- 1 egg lightly beaten in bowl
- olive oil
- Salt pepper
Crush corn flakes in ziploc bag, then add bread crumbs, salt and pepper. Cut chicken in nugget size pieces. Dip each piece in egg mixture. Then shake egg coated chicken (2 pieces at a time) in ziploc bag with crushed corn flakes and bread crumbs. In a large skillet, heat 1/2-inch oil over medium temperature and saute chicken, turning once, until done. Drain on paper towels.
- 1 20 oz can crushed roma tomatoes
- 1-2 cloves garlic, crushed
- 5 basil leaves
- 1 tsp of crushed red peppers (optionnal)
- Salt and pepper
I basically just poured the tomatoes in a pot, added the crushed garlic and red pepper flakes. I brought it to a boil, then turned down the heat and let it simmer while I was preparing and cooking the chicken. When it was nice and thick I stired in the chopped basil.
This is my new invention. Tastes so good: just half cranberry juice (the no sugar added kind) and half tonic water (I used the diet kind) plus a squeeze of lemon or lime!
This dinner was really great. Travis had one bite of the chicken nuggets and asked if there was enough for seconds! Was really disappointed when I told him that’s all there was. Guess he really liked it. I love cooking for him because I could just fry an egg and he would be impressed. Makes me feel like the best wife ever!
Anyway, today is his BIG birthday. He’s turning 30!!!! He didn’t want a big party so it’ll just be he and I and some MEXICAN FOOD!!! So I’d better start taking my cold medicine to feel better.
