I woke up early this morning to prepare some healthy blueberry muffins for our little party at work. 13 new students arrived this week and my sweet residents are leaving next week so it will be a mix of welcome/ farewell party. My second batch of muffins is now in the oven and even though the first one ended up a little overcooked, I’m still pretty happy with them.
While everything was gently cooking, I decided to prepare a good breakfast. Oats were calling my name, so was my beautiful mexican bowl I haven’t used for a while. I’m in love with it! Mexican oatmeal seemed totally fitting:
- 1/4 cup organic oatmeal
- 1/4 cup organic oatbran
- 1/2 cup milk
- 1/2 cup water
- 1/2 banana
- 2 Tbsp Mexican coffee (from Malongo)
- Dash of cinnamon
- Agave syrup to taste
- Toppings: dark chocolate chips and a few reese’s pieces (just for fun)
This week has been hectic. But we were very lucky to catch up with some of our friends. This included one dinner with our friend Fanny on Tuesday, a lovely vegeterian meal shared with Leslie and David at Aquarius (I need to write a review about this place! I am already thinking of going back next week). And last but not least we saw Vanessa and Tristan yesterday. Their 2 year old son Noah is so big now! And Ella, their 1 month old red head cutie is so adorable. I was so happy to see everyone.
I was also very happy to have hit the gym twice this week (and the week isn’t even over!). I haven’t written much about this on the blog but I used to exercise quite a bit. About 5-6 times a week, I would either lift weight (alternating muscle groups), attend step classes or simply enjoy early morning runs on the Champs de Mars. Exercising has literaly changed my life! Sadly my schedule is so packed now that it is hard to find the time and energy to workout and I’ve gone several weeks without seeing the inside of the gym. But I decided I don’t want that to happen anymore. I want to make exercise a part of my life again, for I want to be active and healthy for a long time to come! So I need to rearrange my schedule and make time for it , NO MATTER WHAT! I am thinking of breaking my training into shorter workouts and aim for 3 weight lifting sessions and 3 cardio sessions a week. Also I’m planning to try some Yoga classes with my friend about once a week. Here is my plan:
- Monday: back and triceps (home workout with dumbbells before going to work) and Yoga class at night.
- Tuesday: off (that day is just TOO packed)
- Wednesday: Shoulder and abs (in the morning at home or gym), 30 min on stepmill at lunch time
- Thursday: 30 min cardio
- Friday: Leg workout at gym
- Saturday or sunday: 30-60 min cardio
This should be enough to keep me in good shape!
Talking about motivation, I have to mention my sis in law, Carrie Anne. She recently commented on this blog about her goal to compete in a half Marathon this year. She has already signed up for a race in March! The dedication it takes to train for such a race totally blows my mind. Carrie Anne, you are an inspiration!

Muffins are ready!
- 1 1/2 cups all purpose organic flour
- 1 1/2 cups organic whole wheat flour
- 1 1/2 Tbsp baking powder
- 1/2 cup unsweetened apple sauce
- 1/3 cup agave syrup
- 2 eggs
- 1 cup milk
- 1 Tbsp vanilla extract
- 1 1/2 cup blueberries (frozen)
Mix dry ingredients. Stir in apple sauce. In a smaller bowl, beat eggs and add milk, vanilla extract and agave syrup. Add to the flour and apple sauce mixture. Gently fold in the blueberries. Fill muffin tins 2/3 full. Bake at 400°F for 20 min approximately.
For some reason, my muffin always turn out looking really crazy! But they are guiltfree and simply delicious! Also, you can use this recipe with Cranberries and nuts, choco chips, apple and cinnamon…. The possibilities are endless!
The husband finally woke up and instantly commented on the delicious smell coming from the kitchen. So I had to let him have one of the muffins… in a cute heart shaped plate. The way to a man’s heart is through his stomach, indeed!!!
